Potlucks are a great way to see family and friends over the weekend, without all the excessive cooking of course. Each person brings their small part to a larger meal and it makes recipe sharing and trying new dishes much more exciting.

But even so, we quickly realized that we still can’t find time in the day to get up and make our contribution. Be it a very sleepless night, struggling to get up in the morning or simply because you have no idea what to make, it can be a very stressful time.

Luckily, we have some wonderful ideas that are quick, easy, and affordable to make. Most of these items can even be made a day or two in advance. So skip that early morning rush and say hello to your new favorite potluck breakfast ideas.

9 Best Breakfast Potluck Ideas

1. Muffins

Let’s start with the most basic dish; muffins. Predictable as they may be, muffins are a great breakfast dish for a reason, and who says you have to make plain bran muffins?

No-no; here we only go for gold. There are tons of much more interesting muffin recipes and ideas out there. There are espresso muffins, pumpkin pie muffins, French toast muffins, and salted caramel muffins. These are only a few very exciting ideas.

There are a bunch of savory muffin ideas as well if sweetness in the morning isn’t your thing. You can try making basic egg muffins, or something more interesting like a bacon and maple syrup muffin. Cornbread muffins are just as delicious and go great with a wide assortment of accompaniments.

Bisquick Muffins usually takes around 40 minutes to make, but can very easily be made a couple of days in advance – we would recommend it. When muffins are allowed to sit a day or two, the flavors mature and develop into a much more interesting dish.

2. Quiches

A quiche is another classic, even traditional, breakfast food. You can either make a quiche with a crust on them or a crust-less quiche.

Crust-less quiche is of course much less work, although you can also just buy frozen quiche pastry for easy use. Either way, quiches are fantastic because all you need are eggs and cheese. The rest of the ingredients are simply whatever you have in the fridge.

You can choose a wide range of cured meats like pancetta, ham, bacon, or chorizo – any kind. Just add a bunch of cheese to the mix and just like that, a perfect quiche. Some of our favorite types of cheese to use include cheddar, Gouda, Camembert, and goat’s cheese.

You can also use leftovers from the previous nights’ dinner to make a mouth-watering savory quiche. If you have a piece of fillet, chicken breast, salmon ribbons, or pork chop – any one of these can be diced and added to the mix.

You can also opt for a veggie version with a bunch of caramelized onions, spinach, or a ratatouille type quiche (a combination of winter vegetables).

Quiches are as versatile as they come so start experimenting; you’re bound to find your favorite.

3. Casseroles

You’ve probably seen a thousand breakfast casserole recipes by now, but they are really fantastic and very convenient. They are very similar to quiches by having an endless amount of flavor and ingredient combination – your casserole will be different every time and therein lays the beauty of it.

Breakfast casseroles are a combination of breakfast food (like bacon, eggs, French toast, muffins, etc.) and dinner.

Here is our personal favorite; combine a bunch of cooked potatoes (or hash browns), leftover sloppy joes, bacon, and a bit of scrambled eggs. Bake the casserole and as easy as that – quick and delicious.

4. Overnight Chia Pudding

These are one of our favorite breakfasts of all time. Chia pudding has become all the more popular over the years just for its convenience.

The most basic of a recipe is to combine some chia seeds with yogurt and leave it to soak overnight in the refrigerator.

You can of course choose much more elaborate recipes where you use fruit puree to flavor the yogurt (or just use flavored yogurt). You can also make very fancy chia puddings that will impress all your guests, by layering colors and ingredients.

Incorporate some seeds, nuts, or fruits to make it more interesting.

Chia pudding is not only very filling but very healthy and will balance out the chocolate chip muffins nicely.

5. Breakfast Burritos

This is another very quick, easy, and convenient breakfast potluck idea. The simplest form is of course some scrambled egg, bacon, tomatoes, and chives.

From thereon, your imagination is the only restriction. Use some chicken or beef strips to make your burrito more filling.

You can also use some leftover casserole and combine it with the scrambled eggs. Whatever you may choose, you can make the filling the day before and simply assemble in the morning.

6. French toast roll-ups

If you have a bit more time on your hands, why not make French toast roll ups? They are very easy and straight forward and still, even though they’re a bit more work, only takes a few minutes – half an hour max!

Place a piece of bread flat on the surface. Add a filling or spread of your choice (we love Nutella or some cheese sausages) and start rolling. Secure the roll with a toothpick and dip the roll in the egg mixture you normally would for traditional toast.

Pan-fry until they are nicely golden brown and top with some cinnamon sugar.

7. Waffles

The reason we chose waffles above pancakes, crepes, or flap jacks, is because they are much quicker to make. Waffles are made in a waffle iron and aren’t as labor-intensive as the other dishes we just mentioned.

You can simply make the batter and toast some waffles. While they are toasting, it allows you to prepare some accompaniments.

You can however also buy premade frozen toaster waffles. These will save you even more time and to be honest, sometimes they are just as good as homemade ones.

Waffles can be both savory and sweet. For some savory ideas, seeing this is breakfast, choose some maple syrup bacon as a topping with chives and a dollop of crème Fraiche.

You can also make some chorizo waffles with a delicious balsamic dressing.

8. Fruit Salad

It’s a healthy recipe that typically gets ignored at potlucks, however our fruit salad is considered almost essential. This will bring out the absolute flavor that you need.

This is certainly a dish that is unique and worth considering.

9. Coffee Cake

This is an amazing treat that is perfect for anytime of the day. Combine this with coffee to give you the ultimate potluck. This cake is so good, you’ll be delighted you’ve decided to include it. Breakfast, lunch, dinner it doesn’t matter this is ideal for any occasion.
