Before starting with the recipe, let’s get you informed about the time required. In a nutshell, you need at least 42 minutes to prep, bake, and finish your deliciously easy buckeye brownie cookies

Ingredients

  • 1/4 cup 1/4 of softened butter

  • 1 cup 1 of peanut butter (The creamier, the better)

  • 4 ounces 4 of softened cream cheese

  • One whole large egg

  • 4 ounce 4 of chocolate chips

  • Dry Ingredients:
  • A family size box of fudge brownie mix (Usually consists 19.5 ounces of the batter mix) 

  • 1 cup 1 of powdered sugar

Directions

  • Pre-heating your oven is a thumb rule when baking cookies. Start by preheating your oven up to 350 degrees. 
  • Step two involves making the dough. This is a very crucial step. Follow the recipe to the T because if you mess this up, your cookies might not puff up and give you a flaky, buttery texture. 
  • To make the dough, place your brownie mix, cream cheese, and butter in a medium-sized bowl. Mix all the ingredients and beat the mix well enough to create a smooth and soft dough. Keep a hawks eye when beating the mixture. Wondering why? Well, over beating the ingredients can harden the dough.
  • Time to introduce an ungreased cookie sheet in the process. Take out scoops of the dough and place it on the cookie sheet. You should be able to scoop out at-least 24 little balls. Since the cookie you are looking to bake is possibly round, smoothen the rough edges. 
  • Take aside another bowl and pop in the powdered sugar and peanut butter. Give it a good mix until it is seamlessly combined. Now, make multiple one inch balls from this mixture. You must have at least 24 balls, one for each cookie dough already scooped. Set these balls aside. 
  • Bake, bake and bake away – chuck your prepared cookie dough in the oven and bake for good 12 minutes. Don’t just blindly follow the time mentioned. One must use their instinct while baking. So make sure you have undivided attention while your cookies are baking away in glory. Watch out and ensure that these cookies are neither undercooked, not overcooked. The dough must be perfectly baked. 
  • When done, take your piping hot and fresh-baked cookies out of the oven and squeeze in the peanut butter balls you’ve prepared. The idea is to let the butter and sugar soften in the residual heat of the cookies. Let these gorgeous chocolate cookies cool for at least five minutes. 
  • Arrange for a wire rack and gently transfer the cookies on to the rack. This step allows the cookie to cool and also paves the way for the next major step. What follows next is pure decadence.
  • Take a bowl and pop in 4 ounces of semi-sweet chocolate. Now the microwave these chocolate chips for 30 seconds. Take it out and stir it. Chuck it into the oven for another fifteen seconds. The objective is to melt the chocolate completely. Remember, this is how the chocolate works wonders and adds oodles of chocolaty flavor to the already flavorsome cookies. 
  • Once the chocolates are completely melted, start coating the crust of your cookie with 1/2 a tablespoon of the melted chocolate. The chocolate glides on to the exposed peanut butter ball that’s in the center of the cookie. Isn’t it a wonderful way to camouflage what’s in the cookie? For instance, when someone bites into the cookie reckoning it to be a chocolate brownie cookie, there is a special peanut butter center taking all by a happy surprise. 

Notes

  • Desserts, if too sweet, are not enjoyed properly. To make it a delightful experience for those having a sweet tooth, pick out semi-sweet chocolate chips.
