These White Chocolate Macadamia Nut Cookies are one of my favorite recipes on this website and for good reason. They mix two of my ultimate combinations, white chocolate and nuts.

Ingredients

  • ½ cup of salt-free butter, maintained at room temperature

  • ¼ cup of white granulated sugar

  • ¾ cup of brown sugar

  • 2 large 2 eggs

  • ½ teaspoon of real vanilla extract

  • ½ tablespoon of light corn syrup

  • 1 and ½ cups of all-purpose wheat flour

  • ½ teaspoon of baking soda

  • ½ cup of white chocolate chips

  • ½ cup of macadamia nuts, chopped or smashed

Directions

  • Use an electric mixer to beat the butter and the sugars on extra low speed. Don’t omit this step otherwise the mixture is not going to be homogenized.
  • Then add the egg, vanilla extract and light corn syrup at a slow pace. Check every time if some combs are made in the mixture and start dissolving them.
  • Using another bowl, whisk together the flour, baking soda and salt. This is a crucial procedure for the success of the dough. You need to stir them up together and gradually add them to the butter mixture. Then put all the ingredients to the electric mixer and start functioning at a medium pace. Stop when you get a well combined mix.
  • Place the white chocolate chips on a Bain-Marie and start melting it. When it reaches the right temperature close to 70 degrees celsius you gradually place the chopped macadamia nuts inside. You the add it to the dough using a spatula.
  • Leave them in the refrigerator overnight.
  • The next day, you should start preheating the oven at 180 degrees Celsius (350F). Place a cookie sheet made from parchment paper that cannot be burnt in the oven.
  • Then use a small cookie scoop or just a large tablespoon to place the dough onto the lined cookie sheet. This is important for having equally sized cookies. Only take the right portion of dough each time. Make sure you are leaving lots of space between the lines (at least 2 or 3 centimeters) as the dough is going to expand gradually when baking. You certainly don’t want your cookies to stick to one another.
  • Then bake the cookies for at least 10 minutes till you observe the outer cookies surface to get a golden color. Check for the cookies center to be smooth and soft and you can remove them from the oven.
  • Get your cookies to a chilling spot to cool down and rest. Upon reaching room temperature you should place them in an airtight container for up to a week. You will have the tastiest cookies for your whole family.
  • Serve and enjoy.

How Long Can I Freeze White Macadamia Nut Cookies? 

Great question and one I had to ask myself when making these treats. Keeping these around the house isn’t very easy because they’re so tasty but when cooking in batches you may want store some in the freezer. If that is the case, storing them in the freezer for up to 3 months is ok, however make sure to keep them properly covered and if possible in an air tight vacuum.

Although I love my cookies straight out of the oven, that isn’t always possible. From frozen is equally as tasty.
