✔ Updated · 23 Chipotle-inspired proteins, rice, beans, salsas and builds

These 23 Chipotle copycat recipes cover the whole burrito line at home, from smoky adobo chicken and barbacoa to cilantro lime rice, corn salsa and queso. Make three or four, and burrito bowl night is ready.

Quick answer: how to make a Chipotle bowl at home

A Chipotle-style bowl has five layers: cilantro lime rice; black or pinto beans; a protein such as adobo chicken, steak, barbacoa, carnitas or sofritas; fajita veggies and one or two salsas; then toppings like cheese, sour cream, guacamole and romaine. Cook the protein, rice and beans ahead, and each bowl takes about 5 minutes.

  • Start with: chipotle chicken, cilantro lime rice and black beans. They make the classic bowl.
  • Most made ahead: the proteins, beans, salsas and vinaigrette all keep 3 to 4 days in the fridge.
  • Safe temps: chicken 165°F, steak 145°F plus a short rest, pork and beef braised until tender. Reheat leftovers to 165°F.

Chipotle Proteins

The protein is where most of the work is, so I cook one big batch on Sunday. Chipotle's chicken, steak, barbacoa and sofritas all share the same smoky base of chipotle, garlic, cumin and oregano, so once you have the marinade down, the rest feel familiar.

How to Build a Chipotle Bowl at Home

This is the order I use, and it works for a family dinner or a packed lunch.

  • 1. Rice: about 3/4 cup of cilantro lime rice, white or brown.
  • 2. Beans: 1/2 cup black or pinto beans, drained a little so the bowl isn't soupy.
  • 3. Protein: about 4 oz chicken, steak, barbacoa, carnitas or sofritas.
  • 4. Veggies and salsa: fajita veggies, then one mild salsa and one hotter one.
  • 5. Toppings: cheese, sour cream, guacamole and shredded romaine last, so they stay cool and crisp.
  • Meal prep: pack salsa, sour cream and guacamole separately. Bowls keep 3 to 4 days in the fridge; reheat the rice, beans and protein to 165°F before adding cold toppings.
