✔ Updated · new copycat recipe with step photos and Chipotle's own ingredient list

This copycat Chipotle chicken is juicy thighs soaked in a smoky chipotle adobo marinade, grilled until the edges char, then chopped for bowls and burritos. It's the protein I make most for burrito bowl night, and it takes about 30 minutes of real work.

How Do You Make Chipotle Chicken at Home? (Quick Answer)

Blend 2 chipotle peppers in adobo with 2 tablespoons of adobo sauce, 4 garlic cloves, 3 tablespoons of oil, 1 tablespoon of white vinegar, cumin, oregano, black pepper and salt. Coat 2 pounds of boneless chicken thighs and marinate for 1 to 24 hours. Grill over medium-high heat for 5 to 7 minutes per side, to 165°F, rest 5 minutes and chop small.

The one tip that matters: Leave the thighs alone on the grill. That dark char is half the flavor, and it only happens when the chicken stays put for the full 5 minutes.

Why You'll Love This Chicken

  • Smoky, garlicky and mildly spicy with that charred, chopped texture you know from the burrito line.
  • Built from Chipotle's own ingredient list chipotle chili, garlic, cumin, oregano, black pepper, oil and vinegar.
  • Five-minute marinade made in the blender with one small can of chipotles.
  • Thighs stay juicy even reheated, so it's great for meal prep.
  • One batch, many dinners bowls, burritos, tacos, quesadillas and salads.

What Is in Chipotle's Chicken?

Chipotle publishes the ingredients for every menu item on its real ingredients page. For the chicken, the list is short: chicken, chipotle chili, garlic, cumin, oregano, black pepper, salt, high oleic sunflower oil, distilled vinegar and water (checked October 2026). No sugar, no lime and no onion.

That's the list I built this copycat around. Canned chipotles in adobo bring the smoky chili, and a quick blend turns everything into a thick paste that clings to the chicken. The amounts are mine, since Chipotle doesn't publish its recipe.

Ingredient Notes

Exact amounts are in the recipe card below.

  • Chipotle peppers in adobo: smoked, dried jalapeños in a tangy red sauce. One small 7 oz can is plenty, with leftovers to freeze.
  • Boneless, skinless thighs: forgiving, juicy and quick to char. About 8 thighs make 2 pounds.
  • Neutral oil: Chipotle lists sunflower oil. Sunflower, canola or rice bran all work; olive oil is fine but tastes a little fruity.
  • Distilled white vinegar: a small splash for brightness, straight from Chipotle's list.
  • Mexican oregano: more citrusy than the Mediterranean kind. Regular dried oregano still works.
  • Ancho chile powder (optional): not on Chipotle's list, but many copycats add it for a deeper red color. I leave it out when I want the closest match.

Tips for Success

  • Use thighs. Chipotle's ingredient list just says chicken, but nearly every copycat cook lands on boneless thighs, and so do I. They stay juicy over high heat, where breasts dry out fast.
  • Control the heat with the peppers. Two chipotles gives a gentle, smoky warmth. For more kick, add a third pepper. For kids, use 1 pepper and all of the adobo sauce.
  • Don't skip the vinegar. Chipotle lists distilled vinegar for its chicken, and that small splash brightens the smoke. I use plain white vinegar, never more than a tablespoon.
  • Marinate at least an hour. Overnight is even better. Past 24 hours the texture starts to turn soft, so I stop there.
  • Shake off the excess. A thick coat of marinade burns before the chicken cooks. Let it drip, and you get char instead of soot.
  • Chop small. Half-inch pieces are what make it feel like the burrito line, and every piece gets a bit of charred edge.
  • Freeze the leftover chipotles. I freeze the extra peppers one at a time on parchment, then keep them in a bag for the next batch.

A copycat-style version of the grilled chicken at Chipotle: boneless chicken thighs marinated in a blended chipotle adobo with garlic, cumin, oregano, black pepper, oil and a splash of vinegar, grilled until charred and chopped for burrito bowls, burritos and tacos. Serves 6.

Ingredients

  • For the Chipotle Adobo Marinade
  • 2 chipotle peppers in adobo sauce (from a 7 oz can)

  • 2 tablespoons adobo sauce from the can

  • 4 garlic cloves, peeled

  • 3 tablespoons neutral oil (sunflower, canola or rice bran)

  • 1 tablespoon distilled white vinegar

  • 2 tablespoons water

  • 1 teaspoon ground cumin

  • 1 1/2 teaspoons dried oregano, preferably Mexican

  • 1/2 teaspoon black pepper

  • 1 1/4 teaspoons kosher salt

  • 1 teaspoon ancho chile powder (optional, for color; not on Chipotle’s list)

  • For the Chicken
  • 2 pounds boneless, skinless chicken thighs

  • 1 tablespoon neutral oil, for the grill

  • 1 lime, cut into wedges, to serve (optional)

  • 2 tablespoons fresh cilantro, chopped, to serve (optional)

Directions

  • Blend the marinade: put the chipotle peppers, adobo sauce, garlic, oil, vinegar, water, cumin, oregano, black pepper, salt and ancho powder (if using) in a blender or mini food processor and blend until smooth and brick red.

  • Trim any big pieces of fat from the chicken thighs. Put them in a bowl or zip-top bag, pour over the marinade and turn until every piece is coated. Cover and refrigerate for at least 1 hour and up to 24 hours.

  • Heat a grill, grill pan or cast-iron skillet over medium-high heat and brush it with the oil. Lift the thighs out of the marinade and let the excess drip off; discard the leftover marinade.
  • Grill the thighs for 5 to 7 minutes per side, without moving them, until well charred and cooked through to 165°F (74°C) in the thickest part. Work in batches so the pan stays hot.

Every method works. The goal is high heat and a dark char on the outside before the inside dries out.

How to Build a Chipotle-Style Bowl

This chicken is the star, but the bowl is the whole point. Here's how I stack ours on burrito bowl night.

  • Rice: a big scoop of my copycat cilantro lime rice, with bay leaf, lime and a little lemon.
  • Beans: warm seasoned black beans or pinto beans.
  • Protein: about 4 oz of this chopped chicken per bowl.
  • Salsa: fresh tomato salsa, roasted corn salsa or a tomatillo salsa for heat.
  • Toppings: shredded romaine, cheese, sour cream and guacamole.

Frequently Asked Questions

What is Chipotle chicken marinated in?

Chipotle's own ingredient list for its chicken is chicken, chipotle chili, garlic, cumin, oregano, black pepper, salt, high oleic sunflower oil, distilled vinegar and water. This copycat blends those same flavors into a marinade using canned chipotle peppers in adobo.

Does Chipotle use chicken thighs or breasts?

Chipotle's ingredient list just says chicken. Copycat recipes almost all use boneless, skinless thighs because they stay juicy and char well over high heat, and that is what I use here. Breasts work too; pound them to an even 1/2 inch and check for 165°F.

Is Chipotle chicken spicy?

It is smoky with mild to medium heat. With 2 chipotle peppers this copycat is gently warm. Add a third pepper for more heat, or use just the adobo sauce and 1 pepper for a milder, kid-friendly batch.

How long should I marinate Chipotle chicken?

At least 1 hour and up to 24 hours in the fridge. An overnight soak gives the deepest flavor. Longer than a day and the surface of the chicken can turn soft.

Can I cook Chipotle chicken without a grill?

Yes. A cast-iron grill pan or skillet over medium-high heat works well, 5 to 7 minutes per side. You can also broil the thighs about 4 inches from the heat for 6 to 8 minutes per side. Cook to 165°F.

How many calories are in Chipotle chicken?

Chipotle's nutrition calculator lists its chicken portion at 180 calories, with 32 g protein and 7 g fat (checked October 2026). This homemade version is about 240 calories per serving, because the portions are a little bigger and some marinade oil clings to the chicken.

How do I store and reheat it?

Refrigerate cooked chicken in a covered container for 3 to 4 days, or freeze it for up to 3 months. Reheat in a skillet with a splash of water, or in the microwave, until it reaches 165°F.
