Simple Carrot Ginger Soup


As Winter approaches, our cravings change from ice cream, watermelon and lemonade to hot chocolate, thick stews and soups.

The need to keep ourselves warm and a higher need for calories are two of the reasons why this happens but there’s plenty more: soups are easy to eat, specially when the flu makes you lose all of your appetite; soups are easy and fast to prepare during those super cold, rainy days where you refuse to stay away from bed and in particular, this carrot ginger soup recipe does not only combines all those amazing benefits, but it also comes with the cool side effect of being really healthy.

Its common knowledge that ginger can help fight off the common cold and the flu and relieve soreness and inflammation in the arteries, while carrots have a bunch of vitamins like betacarotene, vitamin K or potassium and they also have plenty of fiber and antioxidants, making this soup an all around remedy for Winter ailments!

Simple Carrot and Ginger Soup Recipe

  • 2 garlic cloves, sliced

  • 1 tbsp rapeseed oil

  • 2 tbsp coarsely grated ginger

  • 1 large onion chopped

  • ½ tsp ground nutmeg

  • 500g carrot (organic, if possible)

  • 400g can cannellini beans

  • 850ml vegetable stock


  • You need to heat up the oil, ideally in a large pan.
  • Add the onion, garlic & ginger, after that fry for five mins.
  • Mix the nutmeg and cook for another minute. Add in the stock, carrots and also the beans (no need to drain the liquid.) Cover and simmer for 20-25 mins until the carrots are nice and tender.
  • Scoop a 1/3 of the mixture into a bowl, then use a hand held blender to make as smooth as possible. Add all the ingredients back into the pan and heat until bubbling. You can top off the soup with nutmeg/almonds.


  • Some people note they couldn’t taste the sweetness of the carrot, hence why it is suggested to use organic carrots.
  • This is absolutely delicious! You will notice how creamy and bright the dish is. When you’ve combine the ginger and nutmeg you’ll notice the carrots really shine through. Some people add a tsp of chilli flakes to add that extra oomph.
