If you’re like me you absolutely love waking up in the morning for one special reason. One of my favourite meals of the day is breakfast and I don’t hide the fact that I absolutely love avocados. The combination of avocado, eggs and bread is just pure bliss. I could have it every day without getting bored but unfortunately that doesn’t always happen.

As much as I like to mix up my food, I always find a staple food in my avocodo, eggs and bread. As simple as it sounds its equally as delicious.

The great news when you’re making this recipe is how easy it is to make, as well as how accomplished you feel making it. For me, nothing says its the weekend without having this easy avocado toast and poached eggs recipe.

It takes only a few minutes to make, will leave you feeling full and ready to get on with the rest of your day.

Ingredients

  • 1 avocado peeled and seeded

  • 2 tablespoons chopped cilantro

  • juice of 1/2 lime

  • 1/2 teaspoon red pepper flakes optional

  • salt & pepper to taste

  • 2 slices whole grain bread or bread of choice

  • 2 eggs fried, scrambled, or poached, optional

Directions

  1. Toast 2 slices of whole grain in a toaster until golden and crispy.
  2. In a small bowl combine and mash the avocado, cilantro, lime, and salt + pepper to taste. Spread half of the mixture on each slice of toasted bread. Top with fried, scrambled, or poached egg if desired.
